I am your chef, Roberto Bettolini. I grew influenced by a wealth of produce from an area rich in specialisations where I formed a great respect for the artisan and traditional methods of Italian cuisine.

Simplicity remains the key to my restaurant, I studied in one of the most well-known cooking schools at the time in Italy.

I have been fortunate to work with Gualtiero Marchesi an important Italian chef considered, at the time, one of the best 4 in the world. This changed my life and style of cooking. I then worked in Michelin star restaurants were I learned my unmistakeable ways of cooking...
